Whisk in the lemon juice or vinegar then beat in the remaining oil in a steady stream. If it's a bit thick, whisk in a couple of teaspoons of warm water to give a consistency that you're happy with.
If the mayonnaise splits or separates while you're making it, don't panic. Beat a fresh egg yolk in a clean bowl and slowly add the split mayonnaise while whisking.
