To make 300ml of mayonnaise, that's enough for 4 to 6 people, you'll need 2 medium egg yolks, 1 tsp Dijon mustard, 300ml of light olive oil, 1tsp lemon juice or white wine vinegar and salt and pepper to season.
Pop a folded cloth under a medium bowl to stop it slipping while you whisk. Then add the egg yolks mustard and a little seasoning and whisk until smooth.
The recipe works best if the yolks are at room temperature so take the eggs out of the fridge about half an hour before they're needed.
