From festivals to Heston's Feasts the coolest foodies know alcoholic jelly is an impressive way to get your party started. But getting alcohol to set can be a tricky game. Without the right blend of booze and gelatine you're likely to end up with a mould full of sludge and that won't impress anyone.

Jellymongers Bompas and Parr take jelly to extremes with their glow in the dark, explode in the mouth and fiery flambé creations. When Heston created his enormous absinthe jelly, he went to these guys for tips. We asked Sam Bompass to give us his step by step guide to making cocktail jelly shots.
