For Willie Harcourt-Cooze, chocolate is a lifetime passion. Having spent 11 years growing cacao on his Venezuelan plantation he's back in Britain and he's determined to get us cooking with chocolate

Willie Harcourt-Cooze is on a mission to be the first chocolate producer to grow and make 100 per cent cacao from bean to bar. From his work on the Venezuelan plantation to his humble Devonshire factory Willie is determined to elevate chocolate from delicious dessert to an essential cooking ingredient. Hannah Williams caught up with the chocolate crusader to find out just what's fuelling this cacao passion

So you've finished filming your tv series. How has it all gone?

We launched at Selfridges last week and I think we sold something like £700 worth of our products. I made three different types of truffles and people were walking out with all three. They all totally got the concept.

You're obviously a very accomplished cook. Where does that come from? Is it something you learnt from your family?

My sister is also a really good cook. I guess we both got it from Southern Ireland where we grew up when we were young. We went to live in Ireland when I was two and lived on a small farm.

We were the original brown bread nutters in the 60s. My earliest memory is being in Streatham in a health food shop above a railway line. I remember it because I must have been scared when the trains rattled by underneath.

In Ireland we grew everything; wheat, grain. I remember catching amazing fish and milling grain on the back of the tractor. We had bees for honey. It taught me the value of everything.

Then I travelled around a lot in my early twenties, in South America and later in Asia and I always found myself in the kitchen, if I'd been out catching fish or something. You end up picking up little titbits; how to make curry paste in Thailand, or how to cook guinea pigs in Peru. It's always been something I've just picked up.

Restaurant food was not as great 20 years ago as it is now so I didn't eat out much. And when I was a student, not having much money, and cooking for friends, someone had to do the cooking and it always happened to be me.

Sadly the farm in Ireland was sold and I guess I've always been looking for a new Ireland with the same abundance that there was then. I suppose I've been trying to follow in my father's footsteps.

So where does the chocolate come in? Do you remember where the obsession was first sparked?

Cacao is great because you can use it so many different dishes. I started experimenting and it just mushroomed. Cooking with chocolate is not necessarily new, they use it in Mexico and the Aztec countries but it's not a very common cookery ingredient in this country.

If you're interested in cooking using chocolate is very exciting. It's like someone coming out and saying 'this is salt' for the first time. I would liken it to that.

How does your chocolate differ to what we're used to with standard chocolate?

It's a lot more full bodied than normal chocolate. It has a real lingering flavour.

Chocolate is often placed in the 'naughty but nice' box. Is eating it with such frequency good for you?

Chocolate should be in the 'nice' box. The misconception about chocolate being bad for you is because of the sugar. Some chocolate spreads are 40 per cent sugar. The great thing about what I'm doing is, with my chocolate, you won't have that high sugar content. Chocolate can be good for you.

I'm not a doctor but I've read a lot about chocolate. They say chocolate that hasn't been processed is full of anti-oxidants, vitamins and minerals. If that's true, my chocolate has got to be the healthiest chocolate in the world.

The program mentions that you've had some orders from top chefs, can we hear anymore about that?

Well I've been selling it to Marco (Pierre-White) for months. I know Neil, the head chef at the Yew Tree (Marco Pierre-White's restaurant) has been using it. I think they've been making a chocolate jus.

And the reaction from people at the launch who previously knew nothing about it was brilliant.

In the future I might make money from it. If I commercialise it. But I'm not doing this to become a millionaire. It's a passion.

  3. Hi there, just wanting some fine details re the cooking of a whole lamb in the ground. Have just butchered the lamb today! Online recipies seem more comlicated than witnessed on your programme. Could you outline how you did it and length of time you left it in the ground etc. Thanks rachel

  7. Hi,just want to thank you. The biggest ever THANKYOU! All my (nearly 40) years life I have never liked dark chocoalte, until a recent stay at our fench retreat I took time out and watched your program, I think it was around Easter. Whilst in France, encouraged by your program and the healthier option dark chocolate offers we purcahsed a bar of 100% cacao chocolate. I really enjoyed it and only needed a couple of squares to satisfy me. (sorry, it wasn't yours, still trying to locate that in Coventry, or wherever!). My husband was totally amazed when returned from France that as a life long milk chocolate fan I took one bite of my (sorry Thorntons!) Easter Egg and put the rest directly in the bin. Not eaten milk chocolate since and even turn my nose up at 70%. Thank you Willie, I am totally coverted. You did it. I don't even look at milk chocolate now.xxx

  9. I have to say your 100% choc is amazing to eat it as is. Who needs a bar? Ive got a prob with sugar and chocolate - crave it, eat it, get told off by my dentist as I dont have refined sugar in any other form so this is my one weakness until now. I love chocolate for the caffine hit (dont drink coffee or tea) Willies choc is curing me of my craving for sugar- dont need any snickers bars or the likes. It took a little bit of adjustment to get used to the bitter first taste but the lingering after taste of the choc goes a long way- now I take two lumps with me to work and that sees me through not needing any sugar hit. Not sure I will go for the bars as this 100% is amazing on its own. But I might have to try a couple of the recipes sometime. Fantastic stuff just sooo loving it.

  17. HI,BOUGHT 5 BARS TO EAT AND 1 100% BAR TO COOK WITH.There was only 8 bars in harvey nochollss(birmingham) but felt guilty to buy them all. We made last saturday our chocolate night followed by a nice bottle of red.what anight.bought a bar of 70% lindt bar but havent finished that one as it doesnt get anywhere near the willies bar. saturdays are now chocolate night and a wednesday and sometimes a sunday and occasinaly tuesday. keep going willie and forgoodness sake get yourself a decent motor with your profits and take abreak with your kids.

  19. Watched the TV prog with great interest am a dark choc man through and through. On a recent visit to Devon I bought some from a local garden centre and really enjoyed it. You are right in all you say. Now comes the problem on my return to the south east cant buy it. My local Waitrose naver has stock and I have tired some other listed stockist by no joy. Where next??

  41. We tried waitrose, ocado on line and selfrides on line and none of them had the new bars or even the old bars. After watching the programme and seeing all the new bars made and this website we were led to believe they were availble to buy already. Apparantly not!!!! We are now eating lots of ordinary chocalate instead. From some very disappointed potential customers.

  44. I tasted your chocolate for the first time today and I have to say..... your chocolate is now my favourite. Though I love dark chocolate, I usually am apprehensive whenever I feel indulgent because I tend to get headaches after. Today I tasted your 72%, allowed the chocolate to just melt in my mouth, and waited for the inevitable slight headache. Amazingly, with your chocolate I didn't experience any negative effects, it was sublime. I almost jumped for joy in the street. I don't know why , or what makes your chocolate so different from the others I've tried. All I can say is I've finally found delicious dark chocolate I can truly enjoy!

  46. Dear Willie and the team I have to say I am a fan and that Willie’s passion and work ethic is admirable. I would like however to voice my opinion of how the programs have become more overtly a simple advertisement for his products. I particularly annoyed by the dreamlike sequence at the end of one of the programs, showing the process of how an attractive woman purchased a bar of Willie’s chocolate at Waitrose. People will his buy his product anyway. There isn’t a need to diminish the integrity of the program for the desire to sell more. Sincerely Silvan Chafiie

  47. I have watched with fasination your programme this week. I think you are courageous and take my hat off to you for pursuing your dream. I have today been to three Waitrose stores to purchase your chocolate to see how it really fairs with the likes of Green & Blacks (I do pride myself as a chocoholic) and each store is sold out! I really didn't expect your chocolate to be in stock as kinda knew after your programme everyone will be buying your chocolate...and so I was right, sadly.   49. I gave up chocolate for Lent and it is going good so far but all I wanted was to eat some chocolate first chance I got. After watching your programs and see your chocolate bars progress the first chocolate I'm going to eat is your chocolate. Even though the nearest store selling it is 23 miles away! It's so worth it.I'm a chocoholic so this, for me will be a definite highlight. Hopefully it won't be sold out. :D

  50. I absoultely adored this programme and thought that Willie was a true chocolate genius. I really felt compelled to watch the three part series, and it had me literally dreaming of pure cacao all night long. I think Willie is a true inspiration to a lot of people. I felt dead excited for him as soon as he heard the good news from Waitrose and from what I hear everybody has been trying to buy it. Including me!!! keep up the chocolaty goodness!

  52. Willy is such a chocolate marvell, his food looks so nice, as for the chocolate, well i was drooling whilst watching the latest 3 programs. I really enjoyed the first series, the second series i thought was even better, im so glad that things are finally coming together for Willy, however, i have got a huge complaint for Willy: i went especially to Waitrose so i could buy som of Willys delectible chocolate, after watching his program i was dreaming about it, the first chance i had, i went to buy some. Imagine my horror to find the shelf empty with a sold out sign on it, i narly cried!!!!!   55. Love the series on ch 4 but very disappointed on visiting our Local Waitrose in Southampton. On the shelf labelled as being Willie's we find 2 choices of bar branded Valrhona, 1 with 40% cacao and 1 with 66%. No mention of Willie at all on the packaging and they appear to be produced in France from caribbean beans. The assistant assured us that these are Willie's Chocolate bars and the logo looks similar to Willie's, but we remain bewildered. We bought 2 of these bars and look forward to trying them tonight. We hope we will be eating the real thing, please could you clarify for us. Good Luck for the future, Simon & Caroline Robbins

Ever since watching your documentary iv been thinking about using chocolate (Cacao) in some new recipes I'm experimenting with. Fantastic ending to the programme last night, but somehow left us wanting more! ... We are on our way out now trying the local supermarkets and scanning their shelves.   58. Just been into Waitrose, Romsey, Hampshire with the children to buy lots of Willie's bars. They won't have any on the shelves until Tues 14 April. Such a shame as it's Easter. Anyway can't wait to taste !

  60. Hi Willie, I watched some of the programme last night. I really think that your revolution is inspirational. As a sworn, lifetime, occasionally guilty, passionate consumer of chocolate, I've read some concerning articles about the state of chocolate economics, namely to do with the problems of unstable prices and the farmers not getting a fair deal who then resort to less than desriable means to harvest a cheap crop. I have just purchased some of your 70% bars from a little store in the Mumbles in Swansea and look forward to giving it a go, especially since I know where they come from. ..The big merchants should be ashamed, very ashamed.

  63. Willie - I've followed your chocolate "adventure" with great interest over both series screened by Channel 4. It's wonderful to see someone pursue a dream in such a dedicated way even when, on times, the odds look stacked against you. You're an example of just what can be achieved with perseverance - you epitomise the saying "Quitters never win and winners never quit" something I always keep in my mind when I'm struggling - Good luck to you and your family! I'd love to visit your factory sometime and "meet the man himself" whose adventures I've followed with awe & pleasure. Like many others who have posted messages I'd love to try your chocolate but it doesn't seem to have reached the dizzy heights of Shropshire where I live. Any chance it may do so?   65. It is such a joy to watch something exciting and adventurous without bad language. Willie has such a passion for chocolate and the story of the connections with South America bring the whole concept of food sourcing and manufacture will hopefully inspire our young people who cannot see past 'celebrity' and materialism, that life is about passion and drive not always for financial gain. Willie reminds me of a 19th century explorer and I hope he is a great success and look forward to tasting the chocolate. I admit to not being a chocolate lover probably because of all the reasons we have had explained in the programmes. Please publish the recipe book soon - though how you'd ever find time, I don't know. Good luck for a very successful future and don't sell out to the big boys!

Willy, good look with the project, was suprised that you had not got a sell direct web site set-up, aiming for mass market through retail chains is one thing but the internet is used the in the right way can be a maasive way to market your products (chocolate, t-shirts, make it yourself kits, receipe kits, books, etc) and reaching a global market, just hope you packaging machine is fixed in time for the big orders. The family is looking forward to trying the chocolate. After working with the internet for many a year, if you are interested to know more thoughts and ideas feel free to email me.

  70. WILLIE! You have missed a trick here on the marketing front. My wife and I would love to buy your chocolate but there is no clear indication of where in the world to buy it. The waitrose people have missed a trick - no mention of the bars on their website. When is it out? Don't tell me you have missed Easter? A nice and simple message to say - buy your bars here - good God man, you would not be driving around in that battered old Volvo. We would happily fund your move into a nice top of the line Merc/ Audi / Jag. Sort it out! Other than this, we love your programmes, your style and cant wait to try the new bar. Keep it up fella!

  71. Hi Willie I have watched all this weeks episodes.Your struggle and fight to fulfill your dream! I went to Waitrose in Peterborough, could only see your 100% and asked an assistant if they had any of your boxes, she was very helpful and went away and came back with a large box, she said they've just come in,! so I bought 3 little boxes. The Peruvian San Martin! I am not a choc a holic but, I can honestly say that when I opened the packet of your choclate the smell was gorgeous. It is also the best chocolate I have ever eaten! no exaggeration. I will only buy yours in future!! I will have to keep an eye open for the raosted almond as someone has just said. Good luck,and I wish you great success with your choclate business! You deserve it!!

I'm sure, as am i, many people want this bar, the only place i could find it was on waitrose deliver, search for "Willies" - i've put a link below, only problem is, i think their website is down for maintenance...i've had this feeling that perhaps because of the show (which i loved) has resulted in orders a lot more than the 32,000 production limit! Which for willy isnt such a bad thing. I think he should get an operations director with clout to get better machinery and get the place to work more efficiently. Fix your WEBSITE willy!!! having no website has got to be bad for many reasons... i mean if i wanted to stock your item who would i phone? Channel four? Or like many people where would i buy from? Hmmm... Good luck, i also; like many others, cant wait to taste it!

Love the programme (love Willie - what a dish!) - not only am I a huge dark chocolate fan, but I too lived in Venezuela for 12 years in Merida! so just seeing Venezuela on the programme is also a big bonus. Savoy chocolate was what I used to eat there. Now I eat 80% chocolate from Lidls. Looking forward to trying Willies chocolate and I hope he really does very very well. Good Luck :-)

Dear Willia It ahs been really interesting watching the second series as it takes me back to when I worked in a Cocoa Factory in Salvador Brasil, where we processed cocoa beans into cocoa cake (massa de cacau) and cocoa butter (manteiga de cacau). The rain, the forest, the roads, the mud tracks, the smell, the beans, the colour, the texture all came flooding back... so huge congratulations for what you are doing, as the milk/sugar/oil stuff that Cadbury's and Nestle calls chocolate is a travesty of what the majesty of cacau is really all about. How the UK advertising standards have accepted it is beyond me. Thank goodness the EC might eventually outlaw their use of the word Chocolate. Finally as a permanent chocoholic, despite my two years in the cocoa factory, if you ever want some tasters or supporters please let me and my wife know. Regards William Barron

  109. Hi - thoroughly enjoyed your program on Channel 4 this evening and looking forward to the next two. I am a fan of 70 plus percent chocolate, can't stand the CDM stuff. My favourite chocolate used to Terrance stamp, subsequently renamed to Peter Rabbit. This had no added sugar, instead it was sweetened with fruit juice. There are lots of 70 percent plus chocolate bars out there but still loaded with sugar. I am looking for chocolate bar without added sugar and is dairy free, is such a bar part of your range.

  111. HAS WILLIE EVER BEEN TO THE CHOCOLATE FAIR IN PARIS?? It is held near the Eiffel Tower in October. I went to the 1st one ever and that was the first time I had the experience of comparing chocolate from different countries...South American v African...so different. Highly recommended. Can you believe there was even a fashion show with gowns made with chocolate!!! For chocoholics everywhere the Paris Chocolate fair is a must not to be missed. Is there now going to be chocolate snobs as there are with the "new " foodies and winies in this country??? Suddenly everyone knows everything about everything about anything edible from TV but Britain is still the biggest shopper of junk/ready made foods/frozen ready made meals and non cookers in Europe.... there is still a very long way to go to educate the British public. Be it about chocolate or anything else edible. But it must start at home. if not obesity and poor nutrition will continue. Education must start at home, continue through the school years....Then you will improve everyones diet. Even Willes chocolate is good for you. A friend has always said if you are lacking in magnesium eat chocolate, but real chocolate. Good luck

  127. i managed to watch most of your series which was inspiring and as fate would have it im now working in Ghana, one of the first things i did was buy 30 kilos of dried cacao beans to play around with, iv managed off the back your program to cook some great stuff, i really enjoy using cacao, amazingly virtually none of the ghanaians are doing anything with their cacao except selling it on for processing, it was great to cook some up using your recipes for some ghanaians and their kids. hope things go well for you and yours, fantastic program! best Adam Reid

  129. Im was sitting watching willies perfect chocolate xmas and felt quite touched. I feel that i can take some inspiration from willies family orientation and how he set a chistmas mood that i thouht had been forgotten. i am only 27 years old with no kids, but when i do have some (hopefully), i will be giving them the same sort of christmas feeling as he showed on tonights episode.   130. I have watched your series and loved every minute - you make me laugh endlessly, and occasionaly cry when things looked tough for you! I was absolutely certain that Xmas 2008 would bring a Willie cookbook presented in a box set with one or two of your blocks of chocolate. I'd already made a list of people who I would buy it for as a Christmas present! To my dismay no such gift set has appeared on the shelves...........will it be available for Christmas '09???

  141. I've just made a chilli con carne and my brother advised me to pop in two teaspoons of cocoa powder. This reminded me of that splendid series following Willy last year and prompted me to google him again in order to buy some chocolate. Just spotted from your comments that Waitrose in Wymondham sell it. That's amazing, as my daughter goes to Wymondham college - so I shall be hot-footing it over there on Monday. thanks...

  143. You can buy it in Waitrose, (Swaffham, Norfolk), and probably in the Eaton and Wymondham stores too. It's near the baking / cake stuff.
