Over the next four weeks Turkeywatch will give an update on turkey information from farms and suppliers nationwide. By Anna Jean Hughes

Bob Kennard of award-winning butchers Grain Farm Organics (www.graigfarm.co.uk) sells two different kinds of Turkey, A free-range additive-free bird costs £9.10/kg and a fully-organic Soil Association bird costs £12.07/kg.

1. In your opinion, how do organic and non-organic turkeys compare?

Because all animals generally have an improved flavour the older they are, then slowly grown, free-ranging organic birds are normally older than non-organic, intensive turkeys, and so will naturally taste better.

2. Have the escalating grain prices affected the cost of your birds and how do you think prices will fare in the coming weeks?

Our prices have gone up on last year, but the prices of our birds will not now change before Christmas. What happens in the longer future is difficult to predict, but generally speaking organic grain has not increased proportionally more than non-organic grain; in fact it has increased less.

3. Do you have any top turkey roasting tips?

Like most organic meat, organic can take longer to cook, and benefits from long slow cooking. I personally like it with lardons of bacon over the top, together with stuffing. Allow 20 minutes per kg and add 90 minutes to overall cooking time.

4. Has there been a rush to buy turkeys this year?

We have seen fairly similar, or slightly higher, sales of turkey to last year.

5. What will you be having for Christmas dinner?

I'm afraid we're traditional at home, and although my wife and I who jointly run our business, have more than enough to do with turkeys in the run up to Christmas, we still have a turkey on the day!
