Over the next four weeks Turkeywatch will give an update on turkey information from farms and suppliers nationwide. By Anna Jean Hughes

6. What is your opinion on home freezing?

I don't think that freezing for a short period of time, e.g. 4-6 weeks, makes any difference.

7. Do you have any top turkey roasting tips?

Top tip for cooking is start it upside down so that the breast doesn’t dry out and keep covered or keep basting. You can buy pop up probes which let you know if the bird is properly cooked; also a good idea.

8. What will you be having for Christmas dinner?

The Merrit family will be doing a Goose this year and assures me that the usual turkey trimmings work perfectly with a well-roasted goose.

9. Are there any limits to the amount of birds you have and when would you advise to buy?

We do have a limit of around 100 turkeys and 150 geese so I would advise to buy as quickly as you can.

10. Do you think people are more adventurous with their Christmas dinners these days?

S&J Organics also sell Golden Welsh Chickens, Ducks, Geese and Guinea Fowl.
