
Gone are the days when cooking with kids meant knocking up a batch of butterfly buns. With a bit of imagination and forward planning there are loads of savoury recipes within the reach of little fingers. Catherine Tunney tackles toddler-friendly tortillas and even throws in a bit of spice.
My three year old son, James, isn’t always a great eater. He can be a bit picky so I’ve had to devise cunning ways to get him to eat well. I’ve realised if he’s involved in the cooking process and can get really stuck into the food, he’s happy and tucks in merrily.
I enjoy baking but, as a child-friendly activity, it’s limited. James can’t get that involved as it often means handling really hot ingredients and there’s not even that much for him to do, save pull about a bit of pastry or scatter Smarties on a cake.
That’s why cooking chilli with tortillas is great. It's really easy to make, full of protein and essential nutrients and it makes for a really fun mealtime where little hands can really participate.
It's good to have all the different components in little bowls (ramekins are great for this). When making tortillas I use shredded lettuce, cucumber chunks, grated cheese, guacamole, rice and the chilli. By having everything in separate bowls your little ones can build up their wraps, being as creative and as slapdash as they like.
It’s also a good way of getting your kids to eat a meal that includes lots of different food groups and adds a bit of spice to their diet from an early age.
