Vine leaves stuffed with rice have been popular snacks throughout the Middle East for centuries. Believed to be born from the tent cookery of the Bedouin nomads, warack dawali were perfect edible packages that helped travellers transport rice and veg from camp to camp. As the caravans journeyed across countries the recipe adapted to the surrounding spices and seasonings. Kind of like a culinary chameleon.
