Jerk cooking is all about the spice. Principally made from Scotch bonnet chillies and allspice, Jerk is traditionally rubbed on to pork or chicken then barbecued by the side of the road. It's real fiery food so not for the faint hearted but that sizzling smell of spiced meat will transport you to the streets of Jamaica quicker than you can say 'I don't like cricket'.
