The name Pad Thai means Thai style frying and the dish does exactly what is says on the tin. Made with a basic combination of rice noodles, chilli, fish sauce and egg you'll find a wealth of varieties on Bangkok's streets featuring bean sprouts, prawns, tofu or chicken. During the economic slump that followed the Second World War the Thai government encouraged the unemployed to make a living by producing and peddling rice noodles on the street. If times get tough in Britain perhaps we should do the same with the Saveloy?
