They look a bit like a really scary conker and we imagine they're considered pretty tough in the mollusc underworld. But beneath that harsh exterior lies a bright orange roe that's rich, creamy and delicious.
The quickest way to search for urchins is drift-diving, a perilous pastime, which involves diving at high tide. Luckily for us they’re also available in coastal fish shops around the country.
