Once at boiling point the steam would lift a hinged flap tilting the kettle and filling the tea pot. Simple. It's not known how much tea ended up on the sheets.

Like the equivalent 'pie safe', it was designed to keep the enclosed food safe from isnects and rodents whilst they were held in a cool, dark, place, like a butter pantry or a basement.

Back when toasts were made over an open fire, at least a small amount of inedible char was impossible to avoid---crust scraping was really necessary.
