Don't ditch the wine from last night's dinner party - it can easily be used up in hundreds of tasty dishes. As a rule of thumb anything offensive to the palate first time round won't work too well on the plate either. And if the recipe calls for a dry white then best opt for a Sauvignon Blanc or a Chardonnay. No one wants sweet scallops.
Risotto is the prefect way to use up plonk. Grab a glass and get stirring with this fennel and mascarpone risotto with scallops and prosciutto.
