Why would you eat that? Since they're massive birds, rearing ostriches intensively would be pretty tricky. If you reach for a nice fillet of ostrich you're guaranteed free-range meat. They're farmed in the UK too so there's less carbon footprint guilt than with a lot of exotic meats. Add low cholesterol and very low fat to the credentials and ostrich meat comes out looking pretty impressive.
What does it taste like? Gamey, but surprisingly more along the lines of venison than pheasant or other game birds.
How should I cook it? "Treat it like you'd treat your very highest quality steak," says Paul. But keep an eye on it. Because ostrich is virtually fat free it can dry out if overcooked. You can get ostrich burgers, if you want to add them to your exotic barbecue but sadly no massive drumsticks. Round off your meal with some ostrich ice cream.
