Why would you eat that? Make space on the barbecue - with kangaroo burgers you can enjoy alfresco feasting without ruining your bikini body. "Kangaroo is a very lean meat," says Paul Cook of exotic meat supplier Osgrow, "it's low fat and low cholesterol so it's much better for you than other red meats like beef." What does it taste like? Imagine a cow and a deer got it on in a non-creepy way, the resulting beef-meets-venison flavour is where kangaroo's at.
How should I cook it? If you're cooking yourself a kangaroo steak, don't overdo it. "It should never be more than medium-rare," advises Paul. The gamey flavour lends itself to sweet tracklements like cranberry sauce or Cumberland sauce and that's not the end of kangaroo's versatility. "You can make a nice curry out of it," says Paul.
