What's in a name?
The Welbeck Farm Shop is a locally renowned farm shop run by Michael Boyle. The shop sells a range of top quality meats and game, which are personally cut and filleted to the customer's preference. But the culinary treats don't stop there - alongside the shop, a cafe, an art gallery and a bookshop there is the Stichelton Dairy, co-run by Joe Schneider and Randolph Hodgson, of Neal's Yard fame.
The pair founded the dairy in 2006 to produce that heavyweight of British products; traditional, raw milk Stilton cheese. However, government rulings on what makes Stilton, Stilton insist on the use of pasteurised milk. So, after a little historical research the pair settled on the Old Saxon name for the cheese - Stichelton, and are now producing a smooth succulent cheese with that unmistakable tang.
