VERA'S MENU



Vera Liburd's menu included the following dishes:


PAN-FRIED KING PRAWN WITH GARLIC CHILLIS

Ingredients:

Large headless King Prawns (4-5 per person)
One small red chilli pepper (chopped)
One large garlic clove (crushed)
The zest and juice of half a lemon and lime
Half a sweet pepper (yellow or green, sliced)
Half an onion (sliced)
Olive oil
One dessertspoon Balsamic vinegar
One tablespoon dark soy sauce
Fresh coriander
Fresh black pepper
Sea salt

Method
Peel and divide the prawns and place in a container. Season with salt and pepper and add your chilli pepper, clove of garlic, zest and juice of lemon and lime, balsamic vinegar and dark soy sauce. Marinade for no longer than one hour.

Heat a wok or frying pan and add a little olive oil. When hot, add your onion and pepper and fry for no longer than a minute. Remove and keep warm.

Take your prawns out of the marinade and add to the wok and pan, cook until pink. Now add the marinade to the prawns and cook for a further minute.

Serve on a bed of mixed lettuce leaves and top with your onion and pepper. Spoon the juices around your plate and garnish with fresh coriander. Serve with French bread and butter.


VANILLA ICE CREAM WITH CRUSHED MALTESERS

Ingredients:

Tub of vanilla ice cream
Packet of maltesers (crushed)
Fresh Fruit puree (strawberry or kiwi)

Method
Spoon some ice cream onto a dessert dish. Pour some fruit puree over the ice cream and sprinkle with some of the maltesers. Garnish with either small pieces of flake, a piece of strawberry or kiwi fruit.
