Jacqueline Gill's dishes included curried mutton and caribbean fruit salad:
Salt fish fritters
Ingredients
300 grams of salted Cod
1 Onion
2 medium tomatoes
2 table spoons flour
3 table spoons water
Soak the Cod overnight to help remove the salt. Flake the cod into a bowl. Add chopped onion and tomato. Then add flour and water. Stir the mix. Extra flour/water can be added depending on the consistency.
Heat a frying pan with oil. Add small balls of the dough and fry until golden. Once ready remove from the heat and leave to cool.
Curried mutton with rice and peas
Ingredients
Leg of lamb
4 spring onions
4 cloves garlic
3 Scotch bonney peppers
Handful thyme
Tinned tomatoes
Paprika
One ground black pepper
1 onion
Curry powder
Salt
Kidney beans
Rice
Bay leaves
Take a leg of pre-chopped lamb, wash and leave in a bowl. The lamb is combined with a jerk seasoning. To make the jerk seasoning take spring onions, garlic, Scotch bonney peppers with the seeds left in, and thyme all mixed together in a food processor. Once mixed add black pepper and extra onion to taste.
The jerk is then mixed in with the cut and washed meat, paprika, curry powder, salt and black pepper are added to taste. Add tinned tomatoes. Mix and leave for 30 minutes to marinade. Once marinaded cook in a pot for 1-2 hours. Add the mix into hot fat and turn, add water to help cook.
For the rice & peas (in the Caribbean kidney beans are traditionally known as peas) you must soak the peas overnight so that they absorb the water and expand. Boil rice as normal – with bay leaves, cinnamon, coconut cream, thyme salt & pepper. Stir peas in shortly before serving. Remove bay leaves, serve.
Caribbean Fruit Salad
Ingredients
1 pineapple
2 mango
1 papaya
2 guavas
2 dessert spoons of sugar
1 lemon
Angostura bitters
Chop all the fruit up, and place into a bowl, then add 2 dessert spoons of sugar. Squeeze a fresh lemon onto the fruit and then pour a dash of bitter over the fruit and mix altogether.
Guinness Punch
Ingredients
2 pints of milk
Bottle of Guinness
Tin of condensed milk
Nutmeg
White rum
Empty a bottle of Guinness to a drinks container than add condensed milk and 2 pints of milk. Grate in nutmeg to taste. Then add a caps-worth of white rum. Stir. Add more nutmeg if required.
