Despite ladybirds and other organic controls, a fungal rot could wipe out Monty’s entire crop. But he has a weapon: sulphur. "Every vineyard in the world uses sulphur," he tells Linzie. "And because it’s a naturally occurring element and it doesn’t leave a residue in the wine, you’re allowed to use it."
