This is a non-organic vineyard, close to Monty's. He shows Linzie how it doesn't have any grass or weeds.
"You cannot make a top quality wine from a vineyard that looks like this," he tells her. "You’ll have to add acidity. You won’t have any native yeasts either because you’ve killed all the micro-flora in the vineyard, so you have to add yeast to get it to ferment."
