Four months after the harvest the wine has finished fermenting and is now in its final maturing phase. Monty gives Sylvana a taste. "Are you excited?" she asks. "It’s nice."
"It’s made in a style to be drunk young and it’s got that vibrancy that I wanted," says Monty. "Because the sooner it’s sold, the sooner I get money back, basically. For the moment, all my money’s tied up in this tank."
