Monty's borrowing Eric’s new pressing machine.
As the grapes are squeezed, the skins give up their tannins. This gives the wine its complexity and character. Monty tastes the juice coming out of the machine. "We’re starting to get a little bit more astringency," he says. "It’s not astringent but a little bit more… kind of 'mouth puckering' wine."
Monty has to judge exactly when to stop the machine or his wine could be ruined.
