Bill made it clear he was not here to listen to me waffle on about compost
spreading, ploughing weeds by horse instead of weed-killing
them, or pruning and picking by the moon. Even when I got
down on my knees to show him how healthy the soil and wild
grasses growing in my vineyard were he just shrugged.
‘Wine is wine, and at the end of the day a wine only interests me if I
think it’s the kind of wine the clients I deal with want to spend
money on.’ Bill was far too modest to say that actually he sold
wine to some of Britain’s finest restaurants and most demanding
private collectors.
