George says: 'Never pay a contractor upfront and never pay your builder more than the value of the works that are carried out. You might need a bit of help with this - whether you have a project manager or a structural engineer - even your architect should carry out detailed valuations and pay the contractor up to the value of the works. Also, pay your builder regularly - work out a schedule of fee payments every month so you know what you're paying, and when.'
