Jargon
Atmospheric pressure Wine is best stored in a cool, dark place, but is more often kept in a hot, bright kitchen. A wine chiller is excellent for replicating the ambience of a cellar in the convenience of your kitchen.
Temperature Your basic models offer a single temperature zone. This is fine for the long-term storage of reds and whites, but you will have to bring the temperature of the reds up a little and the whites down a little to serve. Flashier types offer two or three independent zones to keep different types of wine at the ideal serving temperature.
Humidity If you’re going to be laying down some seriously pricey vintages, consider a chiller with humidity control, which creates the right moisture levels to prevent the cork either drying out or developing mould (ew).
