Matthew says: 'This is something that top chefs, such as Raymond Blanc, are raving about. You sow the seeds of plants like flat leaf parsley or lollo rosso, and when it gets to about 5cm tall, you can start harvesting it. You can grow micro veg in a tray on a balcony or on a windowsill. If you use cut and come again plants, you'll get a constant crop. And harvesting a plant when it's small means that it has very little water in it, so the intensity of flavour is greater.'
