You can cook with lettuce? You can in this scrummy recipe for braised peas with leeks, little gem lettuces and mint that's ideal for vegetarians.
Serves 6
Ready in 20 minutes
1. Trim the lettuces and cut each lettuce lengthways into 6 wedges.
2. Melt half the butter in a deep sauté pan over a medium-low heat. Add the leeks and sauté gently for 2 minutes or until softened. Add the lettuces and cook for 1-2 minutes or until they begin to wilt. Add the peas and 100ml water. Season. Simmer for 3-4 minutes, stirring, until the peas are softened and about half the liquid has evaporated.
3. Dot over the remaining butter, sprinkle with the mint and shake the pan briefly. Serve hot with the lamb.
