Blackberry and orange cordial recipe

Can't give up your cans of pop? Try Gizzi's fruity cordial from Cook Yourself Thin instead.

Gizzi: "The idea behind this is that the agave nectar is a slow release carb and will be much lower in calories than sugar."

Makes 500ml (about 25 portions)

Preparation time 5 minutes
Cooking time 15 minutes

Ingredients

  • 600g blackberries
  • Juice and zest 3 oranges
  • Juice and zest 1 lemon
  • 150ml light agave nectar
  • 150ml water
  • Sparkling water to serve

METHOD

How to make blackberry and orange cordial

1. Place all the ingredients into a saucepan, then gently bring to the boil. Allow it to boil for 15 minutes or until the blackberries have entirely broken up and it has gone syrupy. You can help it along the way by using a potato masher to break them up.

2. Pour through a fine sieve and, using the back of a wooden spoon, encourage the pulp out. Transfer into an old (sterilized) glass bottle or long plastic container.

3. Use about 1cm of cordial with sparkling water and ice for a delicious refreshing drink.
