Brioche bread and butter pudding recipe

Gerald Ashley adds a twist to this classic British pud with marsala-infused sultanas and white chocolate on Come Dine With Me Greater Manchester

Ingredients

  • 100g sultanas
  • 150ml marsala
  • 2 large eggs
  • 600ml whole milk
  • 4 tbsp caster sugar
  • A drop of vanilla extract
  • Nutmeg, freshly grated
  • 1 brioche loaf, cut into 2cm thick slices
  • 100g Belgian white chocolate, grated
  • 100g sultanas
  • 150ml marsala
  • 2 large eggs
  • 600ml whole milk
  • 4 tbsp caster sugar
  • A drop of vanilla extract
  • Nutmeg, freshly grated
  • 1 brioche loaf, cut into 2cm thick slices
  • 100g Belgian white chocolate, grated

METHOD

How to make brioche bread and butter pudding

1. Place the sultanas in a bowl, cover with the marsala and leave to soak over night.

2. The next day preheat the oven to 180°C/gas mark 4. Make the egg mixture by beating the eggs into the milk, and adding 2 tablespoons of the sugar. Add the vanilla extract, a grating of nutmeg and a tablespoon or two of the marsala from the sultanas. Set aside for 10 minutes, or until the sugar has dissolved.

3. Butter 4 x 200ml ramekins and cut the sliced brioche into 5cm rounds. Place a disc of brioche in the bottom of each ramekin and spoon over some of the egg mixture. Add some sultanas and chocolate then repeat the layers, finishing with a layer of brioche. Top with the remaining sugar and bake for 35 minutes, or until the puddings are risen and golden. Dust with icing sugar and serve.
