Whole roast organic fillet of beef in a secret marinade recipe

  • 1.5kg fillet of beef, organic if you can get it
  • 1 tbsp olive oil

For the secret marinade

  • Leaves from 3-4 fresh thyme stalks
  • 2 tbsp wholegrain mustard
  • 2 tbsp clear honey
  • 6 tbsp olive oil
  • 1 garlic clove, peeled and crushed
  • 2 tbsp coriander seeds, roughly crushed
  • Dash soy sauce


  1. Preheat the oven to 200°C/gas mark 6. Mix the marinade ingredients in a large bowl. Place the beef in the marinade, cover and leave to marinate in the fridge for 2 hours.

  2. Lift the beef from the marinade and pat dry with kitchen paper. Reserve the marinade. Heat the oil in a large non-stick frying pan and cook the beef on all sides until well browned.

  3. Transfer the beef to a roasting tin and spoon over the marinade. Roast in the centre of the oven for 20-22 minutes for medium-rare beef, or until done to taste.

  4. Take out of oven, cover loosely with foil and allow to rest for 5 minutes before carving.
