Blackened cod with orange and tomato salsa recipe

Ingredients

  • 1 large orange
  • 1 garlic clove, peeled and crushed
  • 2 large tomato, skinned deseeded and diced
  • 2 tbsp chopped basil
  • 50g pitted black olives
  • 5 tbsp olive oil
  • 4 cod fillets - about 175g each (thick fillets from the head end)
  • 1 tbsp Jerk seasoning
  • Salt and pepper
  • Fresh basil, to garnish

METHOD

How to make blackened cod with orange and tomato salsa

1. Peel and segment the orange, holding it over a bowl to catch the juices. Halve the segments. Mix them with garlic, tomatoes, basil, olives and 4 tablespoons of the oil, season to taste with salt and pepper and set aside to infuse.

2. Wash and pat dry the fish. Pull out any small bones with a pair of tweezers. Brush the fish with the remaining oil and coat well with the jerk seasoning.

3. Heat a large heavy-based pan and fry the cod fillets, skin side down, for 5 minutes. Turn them over and cook for a further 3 minutes. Transfer to a low oven, 150C/Gas 2, to rest for 5 minutes.

4. Garnish the fish with basil and serve with the salsa and a green salad, if liked.
