Chicken and potato kugel

Janet served these crispy Passover potatoes with her chicken on Come Dine With Me East Suffolk

Serves 4


  • 2 tbsps olive oil to grease baking dish,
  • 5 large potatoes, grated
  • 3 large onions, grated
  • 4 tbsp crushed matzo crackers
  • 3 eggs
  • 3 tbsp olive oil
  1. Pre-heat oven to 200°C/gas mark 6. Squeeze excess water out of the potato and onion using a clean tea towel.
  2. Place the potato, onion, matzo crumbs, eggs, olive oil and salt and pepper in a bowl and mix well.
  3. Spoon into a greased and lined tin bake for 25 minutes, or until tender and golden brown.
