Baked Alasaka recipe

  • 3 large egg whites
  • 175g caster sugar
  • 2 mini panettone, each cut into 2 - 3 thick slices
  • Good quality vanilla ice cream


How to make Baked Alaska

1. Preheat the oven to 230°C/Gas 8. Whisk the egg whites in a clean bowl until stiff peaks form. Gradually whisk in the caster sugar, adding just 2 tbsp at a time until the meringue is firm and shiny.

2. Place the panettone slices on a baking tray, evenly spaced apart, and top each one with a scoop of vanilla ice cream, leaving a small gap around the edge.

3. Spoon the meringue over each slice, making sure it covers the ice cream and panettone completely - right down to the tray. Don't leave any gaps or the ice cream will melt.

4. Bake at the top of the oven for 4-5 minutes, until the meringue is delicately coloured and crisp on the outside - don't leave it for any longer! Serve immediately.
