West Indian curry with rice and peas recipe

Serves 5

Ingredients

  • 900g chicken breast, diced
  • 1 tbsp curry powder
  • 1 tbsp chicken seasoning
  • 1 tbsp allspice
  • 2 peppers, chopped
  • 2 onions, chopped
  • 200g mushrooms, chopped
  • Sprig of thyme

For the rice and peas

  • 250g basmati rice
  • Handful of cooked kidney beans
  • 1 spring onion, chopped
  • Sprig of fresh thyme, leaves picked
  • Dash of coconut milk

Method

  1. Place the chicken in a bowl, season with salt and pepper then toss with the curry powder, chicken seasoning and allspice. Cover and chill for at least 2 hours to marinate.

  2. Transfer the chicken to a saucepan and add 750ml water. Bring to the boil then allow to simmer until the water has reduced right down.

  3. Add the peppers, onions, mushrooms and thyme and continue to simmer until soft.

  4. Meanwhile cook the rice until tender then stir in the beans, spring onion, thyme and coconut milk.

  5. Serve the curry on warmed plates with the rice and peas.
