Vegan sausage and mushroom pie recipe

Mark turned a meaty classic into a vegan creation with this hearty pie recipe on Come Dine With Me Sheffield

Serves 4

Ingredients

  • 2 tbsp olive oil
  • 1 leek, sliced
  • 1 bay leaf
  • 3 flat mushrooms, roughly chopped
  • Handful of cashew nuts
  • ½ x 400g can red kidney beans, drained
  • 2 tbsp soy sauce
  • Slosh of cider
  • 8 vegan sausages
  • Frozen vegan puff pastry

Method

  1. Preheat the oven to 200°C/gas mark 6. Heat the oil in a frying pan and gently cook the leeks and bay leaf until soft. Add the mushrooms and cook for a few minutes then add the nuts, beans, soy sauce and cider. Cook briefly until combined.
  2. Cook the sausages according to packet instructions then chop and place in a pie dish with the other mixture. Roll out the pastry and use to top the pie. Bake for 20-30 minutes or until well risen and golden.
