Trio of 381 hearts recipe

Tommy attempted to melt his guests' hearts with this romantic dessert on Come Dine With Me Huddersfield

Serves 5


  • For the honeycomb hearts
  • 2 x 200g bars milk chocolate
  • Knob of butter
  • Splash of double cream
  • Handful of crystallised ginger, chopped
  • 37g bag Maltesers

For the pecan hearts

  • 2 x 200g bars plain chocolate
  • Knob of butter
  • Splash of double cream
  • Zest of 2 oranges, juice of 1
  • 90g pecan nuts, crushed

For the raspberry hearts

  • 2 x 200g bars white chocolate
  • Knob of butter
  • Splash of cream
  • 100g freeze dried raspberries
  • Big handful of mini marshmallows

To serve

  • Edible gold powder
  • Raspberry coulis
  • 5 physalis fruits
  • Double cream


  1. For each mixture, melt the chocolate in a bowl set over a pan of just simmering water. Add the butter and cream and whisk until smooth, then add the other ingredients and stir to combine.

  2. Pour each mixture into heart shaped silicone moulds and set in the fridge or freezer, if pushed for time.

  3. To serve, turn the hearts out and dust with edible gold. Arrange in towers and decorate with raspberry coulis and a physalis each. Serve with double cream and more coulis.
