For each mixture, melt the chocolate in a bowl set over a pan of just simmering water. Add the butter and cream and whisk until smooth, then add the other ingredients and stir to combine.
Pour each mixture into heart shaped silicone moulds and set in the fridge or freezer, if pushed for time.
To serve, turn the hearts out and dust with edible gold. Arrange in towers and decorate with raspberry coulis and a physalis each. Serve with double cream and more coulis.
