Seco de cordero recipe

Patricia made a Peruvian lamb stew for her main course on Come Dine With Me Winchester

Serves 5


  • 10 lamb chops
  • Generous sprinkle of cumin, paprika and chilli powder
  • 440ml can cider
  • Pinch of salt
  • Pinch of sugar
  • 1 bunch coriander, chopped
  • 2 onions, chopped
  • 5 cloves garlic, chopped
  • 1 tbsp tomato purée
  • 500g tomatoes, chopped
  • 2 beef stock cubes
  • 3 carrots, chopped
  • 1 red pepper, chopped


  1. Put the chops in an ovenproof dish and rub with the cumin, paprika, chilli powder, cider, salt, sugar and half the coriander. Cover and allow to marinate for 24 hours.

  2. Drain the meat juices into a pan and heat along with the onion, garlic, tomato purée and chopped tomato. Cook for a few minutes then add the beef stock cubes and chops and add enough water to cover. Cover with a lid and simmer for 1½ hours.

  3. Add the carrots, peppers and remaining coriander 15 minutes before serving. Serve with rice and cannellini beans.
