Put the chops in an ovenproof dish and rub with the cumin, paprika, chilli powder, cider, salt, sugar and half the coriander. Cover and allow to marinate for 24 hours.
Drain the meat juices into a pan and heat along with the onion, garlic, tomato purée and chopped tomato. Cook for a few minutes then add the beef stock cubes and chops and add enough water to cover. Cover with a lid and simmer for 1½ hours.
Add the carrots, peppers and remaining coriander 15 minutes before serving. Serve with rice and cannellini beans.
