Scallops, black pudding and pea purée recipe

This elegant starter kicked off Jade's casino evening on Come Dine With Me Merseyside

Serves 5


  • 300g frozen peas
  • Few knobs of butter
  • Splash of double cream
  • ½ tsp mint sauce
  • 15 slices black pudding
  • 5 slices streaky bacon
  • 150g cubed pancetta
  • 2 cloves garlic, chopped
  • 15 scallops
  • Balsamic glaze


  1. Boil the peas in salted water for about 8 minutes until tender. Drain and blitz in a blender with a knob of butter, the cream and mint sauce. Push through a sieve to get a smooth purée and set aside, keeping warm.

  2. Next grill the black pudding and bacon until crisp.

  3. Meanwhile melt some more butter in a frying pan, and when sizzling fry the pancetta and garlic until golden.

  4. Add the scallops and cook for 30 seconds to 1 minute per side, depending on thickness. They should be just cooked through, but still soft.

  5. To serve, pipe three rounds of pea purée onto each plate. Top with slices of black pudding, three scallops and small bits of bacon. Drizzle on some balsamic glaze and serve with the pancetta.
