Heat 1 tablespoon of the oil in a frying pan and fry the scallops and prawns for 1-2 minutes until just cooked through.
Add the remaining oil and the butter and heat until sizzling, then add the chillies and garlic.
Lift the scallops and prawns onto serving plates and pour the hot oil mixture on top. Season with salt and pepper and serve with the rocket leaves.
