Salt and pepper prawns recipe

Jake began with tasty deep-fried prawns and a Thai salad on Come Dine With Me Wakefield

Serves 5

Ingredients

  • 2 tsp salt
  • 2 tsp pepper
  • 1 tsp Chinese 5 spice
  • 1 tsp sugar
  • Vegetable oil, for deep-frying
  • 1 shallot, finely sliced
  • 2 cloves garlic, sliced
  • 2 chillies, finely chopped
  • 4 spring onions, finely chopped
  • 8 tiger prawn, peeled and deveined
  • 350g cornflour
  • Lime wedges, to serve


For the salad

  • 1 carrot, shredded
  • ½ cucumber, shredded
  • Bunch of spring onions, finely sliced lengthways
  • Handful of coriander leaves, roughly chopped
  • Sugar, white wine vinegar and sesame oil, to dress

Method

  1. Dry-fry the salt, pepper and five spice in a pan until toasted. Tip into a bowl and mix well with the sugar.

  2. Heat a little oil in a frying pan and fry the shallot, garlic, chilli and spring onions until soft.

  3. For the salad, mix the vegetables and coriander together then dress with the sugar, vinegar and sesame oil.

  4. To cook the prawns, heat a fryer or deep pan of oil to 180°C. Dust the prawns in a flour then fry, two at a time, for 2-3 minutes until golden, draining the cooked prawns on kitchen paper as you go.

  5. Tip the prawns into the salt and pepper and toss with the onion mixture, then serve with lime wedges.
