For the mash
To serve
Preheat the oven to 180°C/gas mark 4. Spread the onions in a large roasting tray and place the turkey breast-side down on top. Cook for 20 minutes per kg plus 70 minutes, then turn breast-side up for the last 30 minutes of cooking.
For the mash, boil the potatoes until tender then drain well and mash with the butter and milk.
Meanwhile boil the giblets in a pan of water until reduced by half. Sieve the liquid into a clean pan and mix in the flour, stock and red wine. Simmer until thickened, adding the juices from the bird and the onions from the pan.
