Linda Weeks-Holt's main course is a hearty meat pudding with mash on Come Dine With Me Stockport
Heat the oil in a frying pan and fry the meat and onion until browned. Add the cornflour and port and stock pot and simmer for a few minutes.
Place the suet and flour in a bowl and mix in 6 tablespoons of water, or enough to make a dough. Bring together then roll out on a lightly floured surface. Cut into 5 strips then spoon the meat mixture on top, setting aside some to serve as gravy.
Wrap the pastry around the filling then wrap each pudding in a clean cotton cloth or piece of muslin. Secure with string then simmer gently in plenty of water for 3 hours.
Meanwhile boil the potatoes until tender then mash with the milk, butter and some salt and pepper.
Unwrap the puddings and serve with the mashed potatoes and reserved filling spooned over.
