Prawn Thai green curry recipe

Anna Gibbons served up this Thai curry for her main course on Come Dine With Me Southampton

Serves 4

Ingredients

  • 2 tbsp oil
  • 140g spring onions, chopped
  • 2 tbsp Thai green curry paste
  • 2 x 200g cans coconut milk
  • Splash of fish sauce
  • Few pieces of pared lime zest
  • 3 large kaffir lime leaves
  • 1 stalk lemongrass
  • 300ml vegetable stock
  • 175g baby corn
  • 175g sugar snap peas
  • 300g spinach
  • 300g peeled king prawns
  • Handful of coriander, chopped

Method

  1. Heat the oil in a frying pan and fry the spring onions until soft. Stir the curry paste and fry for 20 seconds before adding the coconut milk, fish sauce, lime zest, lime leaves and lemongrass and simmering for 10 minutes.

  2. Add the vegetable stock, vegetables, return to a simmer then add the spinach. Once wilted add the prawns and coriander and simmer for a further 5 minutes. Serve with rice.
