Anna Gibbons served up this Thai curry for her main course on Come Dine With Me Southampton
Heat the oil in a frying pan and fry the spring onions until soft. Stir the curry paste and fry for 20 seconds before adding the coconut milk, fish sauce, lime zest, lime leaves and lemongrass and simmering for 10 minutes.
Add the vegetable stock, vegetables, return to a simmer then add the spinach. Once wilted add the prawns and coriander and simmer for a further 5 minutes. Serve with rice.
