For the salsa
Mix the prawns, five spice, oil, honey, chilli sauce, lemon juice and shallots in a bowl. Cover and refrigerate overnight to marinate.
Preheat the oven to 200°C/gas mark 6. Spread the prawn mixture on a baking tray and bake for 5 minutes. Cool completely then chop finely.
Mix the prawns with the crab meat and mayonnaise and a squeeze of lime. Mix all the salsa ingredients together and serve with the timbales.
Arrange the mixture in layers in a cooking ring. Carefully remove the ring, drizzle with chilli oil and garnish with lime.
