Place the salmon in a saucepan with the wine and poach gently for 6 minutes. Drain, cool and flake into a bowl.
Empty the sachets of gelatine into a bowl and mix in 65ml cold water. Add to the bowl 125ml boiling water, stirring until dissolved.
Mix the remaining ingredients with the salmon, then pour the gelatine over and mix to combine. Pour into a greased mould and chill overnight to set.
When ready to serve, turn out of the moulds and decorate with lemon slices and parsley.
