Panna cotta aux fruits rouge recipe

Wayne serves red fruit with his light dessert on Come Dine With Me: Return of the Worst

Serves 5

Ingredients

  • 500g mixed red berries such as raspberries, cherries and blackberries
  • 4 tsp fresh lime juice
  • 120g brown sugar
  • 600ml double cream
  • 200ml whole milk
  • 2 Madagascan vanilla pods, seeds only
  • 1 tsp vanilla essence
  • 2 tbsp orange blossom honey
  • 4 sheets of leaf gelatine
  • Mint, to decorate

Method

  1. Place the fruit in a bowl and mix with the lime juice and sugar. Cover and chill for a good few hours.

  2. Place the cream, milk, vanilla seeds, vanilla essence and honey in a saucepan and bring to a slow simmer. Meanwhile soak the gelatine in cold water until soft, then squeeze out the excess liquid.

  3. When the cream is hot, add the gelatine and stir until dissolved. Strain the liquid through a sieve into a jug. Pour the mixture into serving glasses and chill until set.

  4. Spoon the fruit mixture over the panna cotta and serve.
