Paella with prawns and mussels recipe

Serves 5


  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 2 chicken breasts, diced
  • 1 red pepper, chopped
  • 200g long grain rice
  • 1 tsp turmeric
  • 300ml chicken stock
  • 400g can chopped tomatoes
  • 200g chorizo, chopped
  • Small bunch sage, chopped
  • 175g frozen peas
  • 200ml white wine
  • 8 shell-on king prawns
  • 200g fresh mussels, cleaned and debearded


  1. Heat the oil in a frying pan and fry the onion and garlic until golden. Season the chicken and add to the pan and cook until sealed. Add the pepper and cook for a further few minutes.

  2. Add the rice and turmeric and cook for 3 minutes before adding the stock and tomatoes. Season to taste and simmer for 5 minutes, stirring occasionally.

  3. Add the chorizo, sage and peas and cook for 5 minutes, then turn the heat down low and simmer until the rice is tender but still liquid.

  4. Add the wine and seafood and continue to simmer until cooked. Serve in warmed bowls.
