Mixed paella El Raso recipe

Rosalind served this Valencian rice dish complete with chunks of rabbit, but how did her guests feel about an evening filled with unusual meats on Come Dine With Me Alicante?

Serves 4


  • 8 chicken pieces, such as thigh, drumstick and breast
  • 1 rabbit, cut into pieces
  • Olive oil, for frying
  • 225g boneless pork
  • 1 chorizo sausage
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 2 large tomatoes, peeled and chopped
  • Paella spices (already mixed in a jar including saffron)
  • 10 peppercorns
  • 1 clove garlic, crushed
  • Sweet paprika
  • 1 bay leaf
  • 450g cooked prawns
  • 450g paella rice
  • 1.3 litres chicken and beef stock mixed together
  • Handful of cooked peas
  • Canned pimentos


  1. Fry the chicken and rabbit in a little oil until the outside is nicely browned, remove from the pan and add the pork, chorizo and onion, cook for 10 minutes.

  2. Remove the pork mix and add the peppers to the pan. Sweat for a few minutes until starting to soften, then add the chopped tomatoes. Bring to a simmer, then add half the stock and put the meats back in the pan.

  3. Add the spices, peppercorns, garlic, paprika, bay and a pinch of salt. Cook over a medium heat for a couple more minutes, then add three quarters of the prawns and the rice and stir thoroughly. Cook for a few minutes on a high heat then turn down to low.

  4. Cook for 15 minutes until the stock has been absorbed, shaking the pan occasionally. Add a little more stock if the pan gets too dry.

  5. Decorate the paella with the peas, remaining prawns and pimentos, then serve.
