Mini doughnuts recipe

Sally's deep-fried dessert was served with a warm chocolate sauce on Come Dine With Me Swindon

Serves 5

Ingredients

  • 250g strong white bread flour
  • 250g plain white flour
  • 200ml warm milk
  • 100g unsalted butter
  • 100g caster sugar
  • 2 medium eggs
  • 1 tsp dried yeast
  • 2 tsp salt
  • 1 litre sunflower oil, for frying


For the chocolate sauce

  • 150g dark chocolate
  • 150g milk chocolate
  • 300ml double cream

Method

  1. Put the flours, milk, butter, sugar, eggs, yeast and salt into a food mixer and mix for 10 minutes.

  2. Take out, shape the dough into a round and pop back into mixing bowl covered with cling film. Leave to rise for about 1 hour until doubled in size.

  3. Take out the dough, press out the air and divide into 20 equal pieces – they should be about 50g each. Roll into balls, poke a hole in the middle and leave to rise for another hour until doubled in size again.

  4. Heat the oil in a fryer or deep heavy-bottomed pan until sizzling hot and deep-fry the doughnuts for about 5 minutes, turning every now and then so they brown evenly.

  5. Drain on kitchen paper and roll in sugar.

  6. To make the sauce melt the chocolate and the cream in a bowl set over a pan of just boiling water. Serve warm with the warm, freshly cooked doughnuts.
