Serves 5
For the chocolate sauce
Put the flours, milk, butter, sugar, eggs, yeast and salt into a food mixer and mix for 10 minutes.
Take out, shape the dough into a round and pop back into mixing bowl covered with cling film. Leave to rise for about 1 hour until doubled in size.
Take out the dough, press out the air and divide into 20 equal pieces – they should be about 50g each. Roll into balls, poke a hole in the middle and leave to rise for another hour until doubled in size again.
Heat the oil in a fryer or deep heavy-bottomed pan until sizzling hot and deep-fry the doughnuts for about 5 minutes, turning every now and then so they brown evenly.
Drain on kitchen paper and roll in sugar.
To make the sauce melt the chocolate and the cream in a bowl set over a pan of just boiling water. Serve warm with the warm, freshly cooked doughnuts.
