For the bread
For the olive tapenade
Mix the salt and flour in a large bowl. Make a well in the middle then add the yeast and cover it with a splash of the warm water. Sprinkle with a pinch of flour and wait for 5-10 minutes until bubbles appear.
Pour three-quarters of the remaining water into the bowl and work into the flour. Turn the dough out onto a floured surface and knead, adding the remaining water if needed. Knead for at least 8-10 minutes until soft and elastic.
Place the dough back in the bowl and cover. Leave in a warm place for 30-40 minutes, or until doubled in volume.
Punch the dough to redistribute the air then knead in the onion and sundried tomato for about a minute.
Shape the dough and place on a baking sheet, then cover and leave to prove once more for 40-60 minutes.
Preheat the oven to 210°C/gas mark 6½ then add a splash of water to the bottom of the oven to create some steam. Bake the bread for 30-40 minutes until golden and hollow-sounding when tapped underneath.
To make the tapenade, place all the ingredients in a food processor or blender and blitz into a paste, adding a little oil to loosen.
Arrange the prosciutto, grapes, cheese, olives and cherry tomatoes on a platter and serve with the tapenade and bread, with oil, balsamic vinegar and a rocket salad.
